I’m a bit sickly and just hang around at home, so I thought about baking some Muffins. We have plenty of Raspberrys in our garden, so I’ve made some tasty Raspberry-Muffins. Have fun bake yourself!
- 1 egg white, 100g flour, 50g oat flakes (I’ve used fresh kibbled oat), 1 tsp. baking powder, 1/2 tsp. baking soda, 2 tbsp. margarine, 1 tbsp. sugar, 2 eggs, a small package of vanilla sugar, 1/2 tsp. cinnamon, 150 ml buttermilk, 100g Raspberrys
Preheat oven to 190 degrees. Whisk the egg white until stiff.
Combine oat flakes, flour, baking powder and baking soda. Beat margarine, sugar, eggs, vanilla sugar, cinnamon and buttermilk until frothy in another bowl.
Add the whipped egg whites, Raspberrys and flour mixture.
bake 20 to 25 minutes.
